Mothers Day Cupcake Recipe with Three Bears Cookery Club

Ingredients:

• 70g butter
• 70g sugar
• Zest & juice of ½ lemon
• 1 tbsp of Greek yoghurt
• 1 egg
• 100g self raising flour
• 1 – 2 tbsps. milk
• 2 tbsps. frozen blueberries
• 6 cupcake cases & tin
• 2 tbsp of icing sugar

What to do:

1. Before you start wash your hands and put on an apron.  Ask your grown up to put the oven on 180c.
2. Put the butter & sugar into a bowl and cream together until light and fluffy.
3. Grate the lemon for the lemon zest and add to the bowl
4. Add the yoghurt, eggs, squeeze the lemon juice  into the bowl mix together.
5. Fold the flour into the bowl, adding some milk if the mixture is a little thick.
6. Fold in the blueberries being careful not to crush them.
7. Put the cupcake cases into the muffin tin and divide the mixture between the cases, smoothing the top over at the end.
8. Ask your grown up to put in the oven for approx.20 minutes until golden and risen.
9. Once cooled sprinkle your cupcakes with a little icing sugar.
