Chocolate Butterfly Cakes – Easy Cupcake Recipes For Kids

Ingredients:

  • 70g butter
  • 70g sugar
  • 1 egg
  • 2 tbsp cocoa
  • 100g self raising flour
  • 30 – 50 ml milk

Buttercream:

  • 100g icing sugar
  • 100g butter
  • 1 tbsp cocoa
  • Sprinkles

What to do:

  1. Wash your hands and put on an apron, ask a grown up to pre-heat the oven to 180c.
  2. Cream together the butter and sugar until soft & fluffy.
  3. Add in the egg and vanilla extract and beat well.
  4. Once you have mixed the egg in, add the cocoa powder until the mixture is all chocolatey.
  5. Fold in the flour, adding some milk if the mixture is a little stiff.
  6. Put your cupcake cases into your tins and divide the mixture between each one.
  7. Ask your grown up to pop them in the oven for approx. 15 mins until golden and springy to touch.
  8. While your cupcakes are cooling mix together the butter, icing sugar and cocoa powder to make your buttercream.
  9. Using a knife (you may want to ask your grown up to help you). Cut out a cone shaped piece of sponge in the middle of each cake.
  10. Spoon or pipe the buttercream into the hole and carefully split the sponge bit in half, this will make your wings. Carefully add two butterfly wings to each cake on top of your buttercream.
  11. Finish off with some sprinkles!

Baby Owl Cupcakes – Easy Cupcake Recipes For Kids

Baby Owl Cupcakes with Enjoibox (Easy Cupcake Recipes For Kids)

Owls are cute, but baby owls are a hoot! These adorable owl cupcakes are sure to dazzle.

Help the owls see with sliced sandwich biscuits “eyes” and make them cute with chocolate chip “beak.”

Prep 20 min

Cook 15 min

Ingredients:

  • 175 g Unsalted Butter
  • 4 tbsp. Boiling Water
  • 115g Self-Raising Flour
  • 165g Caster Sugar
  • 3 Eggs
  • 1 tsp Baking Powder
  • 40 g Cocoa Powder
  • For the buttercream
  • 60 g Unsalted Butter (softened)
  • 3 tbsp. Milk
  • 30 g Cocoa Powder
  • 250 g Icing Sugar
  • Oreo biscuits
  • Chocolate chips

What you will need to do:

  • Step 1 Heat oven to 200°C (400°F, Gas mark 6). Line a muffin tin with paper cases.
  • Step 2 Sift the cocoa powder into a bowl, pour in the boiling water and mix into a thick paste. Add the remaining cake ingredients and mix with an electric hand whisk (or beat with a wooden spoon).
  • Step 3 Divide the mixture equally between the 12 paper cases. Bake in a preheated oven for about 12-15 minutes until well risen. Cool in the cases on a wire rack.
  • Step 4 To make the chocolate icing melt the butter and pour it into a bowl. Sift in the cocoa powder and stir in the icing sugar a little at a time to make a glossy and spreadable. If the icing is too thick, gradually add the milk until it reaches the desired consistency.
  • Step 5 Pipe the chocolate icing over the cupcakes. Now it’s a fun part! Start decorating your owls, add “eyes” to help them see and “beaks” to look adorable. Enjoy!

Lemon Meringue Cakes – Easy Cupcake Recipes For Kids

Lemon Meringue Cakes with Mrs Bun the Baker (Easy Cupcake Recipes For Kids)INGREDIENTS:

  • 100g MARGARINE
  • 75g CASTER SUGAR
  • 2 EGGS
  • 100g SELF-RAISING FLOUR
  • ZEST OF LEMON or ESSENCE
  • 3-4tbsp LEMON CURD
  • 1 MERINGUE NEST,
  • BUTTERCREAM

PREPARATION

  • Preheat the oven to gas 4 or 180c (fan 160c).
  • You will need a muffin tray and 6 paper cases.

2. CREAM

  • Place the margarine into a bowl and soften it with the back of a spoon.
  • Add the sugar and mix until it sticks to the bowl.
  • TIP: If you can hold the bowl upside down without the mixture falling out, you have creamed enough.

3. CRACK THE EGGS

  • Crack the eggs into a jug and beat with a fork.
  • TIP: To crack the egg, tap it lightly on a table. If it’s not cracked have another go, but not too hard!
  • Add the eggs slowly to the mixture, beating well after each addition. (Do not add them all at once-you will flood the mixture and it will curdle).

4. MIX

  • Add in the flour and lemon essence/zest.
  • Fold through gently with a tablespoon.
  • Place a tablespoon of mixture into each paper case, if you have some mixture left, share it out between them.

5. BAKE

  • Place them in the preheated oven for 20-25 minutes until golden brown and spongy.

6. FILL

  • Once the cakes are out of the oven, leave to cool.
  • Once cooled, use a teaspoon and scoop a hole from the top of the cake.
  • Fill the hole with lemon curd and press the sponge back on the top.

7. DECORATE

  • Place a spoon of butter icing on the top of each cake. Crumble up the meringue and sprinkle over the top.

Lemon Drizzle Cupcakes – Easy Cupcake Recipes For Kids

Lemon Drizzle Cupcakes with Smart Raspberry Cookery School 

Equipment needed: muffin tray, cupcake cases, large bowl, wooden spoon, weighing scales, small bowl, fork, sieve, grater/ zester, measuring spoons, sharp knife, chopping board, spatula, skewer, wire rack, table knife.

Ingredients:

  • 110g butter, softened
  • 110g caster sugar
  • 2 medium eggs
  • 140g self-raising flour
  • 1 teaspoon baking powder
  • 2 tablespoons milk
  • zest and juice of 1 lemon

For the buttercream:

  • 55g butter, softened
  • 110g icing sugar, sifted
  • juice of ½ lemon

Method

  1. Preheat the oven to fan 160C/conventional 180C/gas mark 4. Line a muffin tin with 6-8 cupcake cases.
  2. Beat the butter with the sugar until light and fluffy. Break the eggs into a small bowl and lightly whisk with a fork.
  3. Gradually add the beaten egg to the butter mixture, stirring after each addition.
  4. Sift the flour and baking powder into the cake mixture and add the lemon juice, zest and milk, stir until smooth. Spoon the mixture evenly into cupcakes cases, making sure you don’t overfill them.
  5. Bake in the preheated oven for 15-20 minutes or until cooked through and a skewer inserted into the middle comes out clean.
  6. Leave the cakes to cool in the tin for 5 minutes then transfer to a wire rack.
  7. To make the buttercream, mix together the butter and icing sugar then add the lemon juice.
  8. Once the cupcakes have fully cooled, spread the buttercream over the cupcakes.
  9. Decorate with a little lemon zest if desired.
  10. Best eaten on the day but can be stored in an airtight container for a few days.

Banana & Chocolate Cupcakes – Easy Cupcake Recipes For Kids

Britain Loves Baking – Banana & Chocolate Cupcakes (Easy Cupcake Recipes For Kids)

These are perfect for a day out or picnic and easy to store and carry with no frosting to make a sticky mess. The perfect yummy on the go cupcake for all the family

Ingredients:

  • 100g Vegetable Oil
  • 50g soft light brown sugar
  • 3 bananas (about 300g)
  • 2 eggs
  • 150g plain flour
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • 80g of Milk Chocolate Chips

Method:

  1. Preheat the oven to gas 4, 180°C, fan 160°C. Line a cupcake tray with 12 paper cases.
  2. Beat the oil and the sugar in a hand or stand mixer until light and fluffy. Peel the bananas and add to the bowl in rough chunks, then add the eggs. Beat again until everything is well combined and
  3. Sieve together the flour, baking powder and cinnamon into the banana mixture and gently mix to combine. Add 50g of the chocolate drops.
  4. Divide the mixture between the paper cases ¼ from the top. Bake for 18-205 mins until golden and springy to the touch. Cool in the tin for 10 mins before transferring to a wire rack.
  5. Melt the remaining chocolate drops and when the cup cakes are cool, drizzle the chocolate on the top and leave to set.
